The dissolution of soybean protein in soybean meal was enhanced by jet cavitation-mechanical grinding synergistic equipment, and the single-factor experiment and response surface methodology were used to optimize the strengthening dissolution conditions. In addition, the surface activities of soybean protein solution were determined. The results showed that the optimal conditions were obtained as follows: jet cavitation pressure 0.42 MPa, jet cavitation time 62 min, jet cavitation temperature 55?℃, inlet-outlet angle of jet cavitation equipment 30°-40°, ratio of material to liquid 1.5∶?100, mechanical grinding speed 2 000 r/min and mechanical grinding time 30 min. Under the optimal conditions, the solubility of soy protein was 1.808 mg/mL. The water-soluble soybean meal protein treated had a certain surface activity. |
