      利用喷射流空化-机械研磨协同设备强化大豆粕蛋白溶解。利用单因素实验和响应面实验优化了喷射流空化-机械研磨协同强化大豆粕蛋白溶解工艺条件,测定了喷射流空化-机械研磨协同强化大豆粕蛋白水溶液的表面活性性能。结果表明:喷射流空化-机械研磨协同强化大豆粕蛋白溶解最优工艺条件为喷射流空化压力0.42 MPa、喷射流空化时间62 min、喷射流空化温度55?℃、喷射流装置入口角度30°-出口角度40°、料液比1.5∶?100、机械研磨转速2 000 r/min、机械研磨时间30 min,在此条件下大豆蛋白溶解度为1.808 mg/mL;喷射流空化-机械研磨协同强化大豆粕蛋白水溶液具有一定的表面活性。

      The dissolution of soybean protein in soybean meal was enhanced by jet cavitation-mechanical grinding synergistic equipment, and the single-factor experiment and response surface methodology were used to optimize the strengthening dissolution conditions. In addition, the surface activities of soybean protein solution were determined. The results showed that the optimal conditions were obtained as follows: jet cavitation pressure 0.42 MPa, jet cavitation time 62 min, jet cavitation temperature 55?℃, inlet-outlet angle of jet cavitation equipment 30°-40°, ratio of material to liquid 1.5∶?100, mechanical grinding speed 2 000 r/min and mechanical grinding time 30 min. Under the optimal conditions, the solubility of soy protein was 1.808 mg/mL. The water-soluble soybean meal protein treated had a certain surface activity.
