The first-grade rapeseed oil without antioxidant was used as raw material, and the acid value, peroxide value and p-anisidine value were used as monitoring indicators to explore the law of the change in the quality of rapeseed oil (2.5 L/barrel) with nitrogen storage in the simulated domestic consumption period. The results showed that the acid value of rapeseed oil with nitrogen storage did not exceed the limit value (0.2 mgKOH/g) of first-grade rapeseed oil in three months consumption period. For the rapeseed oil with nitrogen storage, the time when the peroxide value reached 5.0 mmol/kg was longer than that of the blank control group by 20 d. The change of p-anisidine value of rapeseed oil with nitrogen storage was relatively flat, and did not change much in the first 30 d. Nitrogen storage could improve the oxidative stability of rapeseed oil, and it might be a new green storage technology for rapeseed oil. |
