对云南22个核桃主要栽培品种进行蛋白质及脂肪含量测定,同时采用气相色谱仪对提取的核桃油进行脂肪酸组成的测定。结果显示:云南22个品种核桃蛋白质含量平均值达14.25%,总体上达到国家Ⅲ级标准,蛋白质含量最高的为‘华宁大白壳’,为21.21%,‘胜勇’蛋白质含量最低,为10.93%。22个品种核桃脂肪含量在59.40%~69.86%,变异系数为3.87%。通过脂肪酸主成分分析,得出‘漾杂一号’综合得分最高,‘娘青’综合得分最低。通过聚类分析,得出高蛋白品种有‘晚龙’‘红河2号’‘圆菠萝’和‘华宁大白壳’,高亚油酸、高亚麻酸品种有‘漾早香’‘华宁大白壳’‘细香’‘宁香’‘假茶’‘圆菠萝’‘漾杂一号’和‘剑丰’。 |

The protein and fat contents of 22 main cultivars of walnut in Yunnan were determined, and the fatty acid compositions of the extracted oils were determined by gas chromatography. The results showed that the average protein content of the 22 main cultivars of walnut in Yunnan was 14.25%,overall meeting the national Ⅲ level standard. The protein content of ‘Huaning white shell’ was the highest, reaching 21.21%, and the protein content of ‘Shengyong’ was the lowest, reaching 10.93%. The fat content of the 22 main cultivars of walnut in Yunnan was 59.40%-69.86%,and the coefficient of variation was 3.87%. Principal component analysis of fatty acid showed that the comprehensive score of ‘Yangza 1’ was the highest,while the ‘Niangqing’ was the lowest.Through cluster analysis,cultivars with high protein content included‘Wanlong’‘Honghe 2’‘Yuanboluo’ and ‘Huaning white shell’, and cultivars with high linolenic acid and linoleic acid contents included ‘Yangzaoxiang’‘Huaning white shell’‘Xixiang’‘Ningxiang’‘False tea’‘Yuanboluo’‘Yangza 1’and‘Jianfeng’. |
