Abstract: |
Under the alkali refining conditions of theoretical alkali amount and 0.4% excess alkali, mass fraction of alkali solution 6.58%, alkali refining temperature 55 ℃ and alkali refining time 20 min, the crude peanut oils with different aflatoxin contents(AFB1 content 21.10-86.70 μg/kg, AFT content 2276-88.25 μg/kg) and different acid value(5.09 mgKOH/g and 11.37 mgKOH/g) were refined respectively. The aflatoxin contents in peanut oil before and after alkali refining were determined, and the removal effects of aflatoxin from different quality crude peanut oils by alkali refining were analyzed. The results showed that the removal rate of aflatoxin could reach more than 95% by alkali refining, and the aflatoxin content in alkali refining oil reduced to about 1 μg/kg, reaching the requirements of national standard limit and the EU limit. Twice alkali refining deacidification of crude peanut oil with high acid value could achieve deep removal of aflatoxin, and the aflatoxin in alkali refining oil could reach undetectable level and oil loss during alkali refining was reduced. |
