Abstract:
      The production processes of fragrant peanut oil, fragrant rapeseed oil and fragrant sesame oil were introduced, and the processes of these three fragrant oils and key equipment were commented. Two type of drum frying machines and some oil presses were specially analyzed, and the fragrant oils prepared by wet process and dry process were discussed. The low temperature filtration or winterization and low temperature water degumming were adopted. It was pointed that the Maillard reaction produced aroma and might produce trace toxins at the same time. The oilseeds produced fragrance at high temperature, at the same time the charing and carbonization of the oilseeds and some toxins should be controlled to produce high quality fragrant oil.
