Abstract: |
The “Qinyou No.10” rapeseed was used as raw material to prepare rapeseed oil. The changes of sterol and tocopherol contents in rapeseed oil in different refining processes were analyzed, and the refining process under laboratory was optimized.The results showed that the optimal degumming process conditions for the purpose of preserving tocopherol and sterol were obtained as follows: temperature 60 ℃, phosphoric acid dosage 0.2%, water dosage 4% and time 30 min.The optimal deacidification process conditions were obtained as follows: alkali mass fraction 11.06%, time 30 min, the initial temperature 30 ℃ and the final temperature 40 ℃.The optimal bleaching process conditions were obtained as follows: active clay dosage 3.5%, time 20 min and temperature 85 ℃.The optimal deodorization process conditions were obtained as follows: temperature 220 ℃, time 80 min and pressure 400-500 Pa.Under these conditions, the retention rates of tocopherol and sterol were 68.15% and 79.49% respectively, and the oil loss rate was 4.9%.Compared with the traditional refining process, the optimal refining process improved the retention rates of sterol and tocopherol, and the oil loss rate did not change significantly. |
