Abstract:
      The ultrasound-assisted cellulase extraction conditions of polysaccharide from walnut shell were optimized by single factor experiment and orthogonal experiment, and the antioxidant activity of the polysaccharide was investigated. The results showed that the optimal ultrasound-assisted cellulase extraction conditions were obtained as follows: solid-liquid ratio 1∶ 20, cellulase dosage 1.75%, extraction temperature 45 ℃, extraction time 90 min and ultrasonic power 750 W. Under these conditions, the extraction rate of polysaccharide was 2.20%. The polysaccharide had better scavenging activity on DPPH free radical,·OH and O-2·, and the scavenging rates showed dose-effect relationship to a certain extent.
