Abstract: |
In order to research the migration of metallic elements in edible vegetable oils raw materials and their products, the contents of eight metallic elements in six common edible vegetable oils raw materials and their pressed oils and oil residue were determined by atomic absorption spectrometry, and the migration rates were calculated. The results showed that the iron content in the six edible vegetable oils materials was higher. The migration amount of metallic elements from raw materials to edible oil was relatively low, mainly remaining in the oil residue. The harmful element chromium was the key control element affecting the quality of edible vegetable oil because of its highest migration rate in edible oils. |
