Phytosterols, squalene, vitamin E, carotenoids and total phenols contents in oils from eleven oil crops in Yunnan were determined by Soxhlet extractor, GC-MS, HPLC and UV spectrophotometer. The results showed that β - sitosterol was the main phytosterol in vegetable oil, and the contents of β - sitosterol and total phytosterol in rapeseed oil were the highest. The content of squalene in olive oil was the highest, up to 0637%, which was significantly superior to other vegetable oils. Safflower seed oil had the highest content of vitamin E, reaching 19.90 mg/100 g(α-tocopherol). Peanut oil had the highest content of carotenoids, up to 18.10 mg/100 g. The content of total phenols in rapeseed oil was the highest (247.91 mg/kg). The comprehensive scores of the main functional components of eleven kinds of vegetable oils were ranked by principal component analysis, and the highest score was rapeseed oil, followed by rubber seed oil, peanut oil, safflower seed oil,olive oil,soybean oil, prinsepia utilis royle oil, oil-tea camellia seed oil, Sacha Inchi oil, walnut oil and macadamia oil. Therefore, if only considering the fat soluble components, rapeseed oil was the best, followed by rubber seed oil. |
