Antarctic krill oil is a functional oil rich in n-3 polyunsaturated fatty acids. In order to improve the oxidation stability of Antarctic krill oil, lipid composition elements influencing the oxidation stability of Antarctic krill oil were introduced firstly in brief, and then the effects of different processing methods on the oxidation stability of Antarctic krill oil were summarized. On this basis, the current situation of evaluating the oxidative stability of Antarctic krill oil by traditional lipid oxidation indexes, changes of trace component content, volatile components and lipidomics was described in detail. The lipid deterioration mechanism of Antarctic krill oil is complex and it is difficult to evaluate the oxidation status.In the future, a reasonable method to evaluate the oxidation stability of Antarctic krill oil should be screened out, and the dose-response relationship between its lipid composition and oxidation stability should be studied systematically. |
