| Abstract: |
| To effectively manage the risk components during the soybean oil refining process and ensure the quality and safety of oil, the migration and removal patterns of three plasticizers, di-n-butyl phthalate (DBP), bis(2-ethylhexyl) phthalate (DEHP), and diisononyl phthalate (DINP), were investigated during the soybean oil refining process. Additionally, the effects of deodorization process parameters on trans-fatty acids (TFA), 3-monochloropropane- 1,2-diol esters (3-MCPDE), and glycidyl esters (GE) in soybean oil were analyzed. The results showed that phthalate contamination was relatively common in 16 types of vegetable oils (2 107 batches). Processing aids during refining were one of the sources of phthalates in soybean oil, among which decolorizing agents (activated clay and attapulgite clay) exhibited relatively high detection rates and migration rates of phthalates. Deodorization was the key processing stage for the removal of phthalates from soybean oil. Prolonging the deodorization time and increasing the deodorization temperature could improve the removal efficiency of phthalates in soybean oil, but resulted in a higher contents of TFA, 3-MCPDE and GE. Moreover, the effect of deodorization temperature was more significant than that of deodorization time.At deodorization temperature 240 ℃ and deodorization time 60 min, the removal rate of DBP in soybean oil reached 98%, and the removal rates of DEHP and DINP were not significantly different from their peak values at 250 ℃, while the contents of TFA, 3-MCPDE and GE remained at low levels. In conclusion, decolorizing agents pose a relatively high risk of phthalates introduction and require close attention. It is recommended that the deodorization temperature should not exceed 240 ℃, and the contents of risk components in soybean oil should be controlled by adjusting the deodorization time. |
