| Abstract: |
| To provide a theoretical basis for the fine utilization of sheep fat and the development of related products, crude sheep fat was prepared using sheep rump fat as raw material, the crude sheep fat was subjected to multi-stage dry fractionation via gradient crystallization temperatures (28, 23, 18, 13, 8 ℃) under the conditions of a crystallization time of 9 h and a cooling rate of 8 ℃/h, and the fatty acid composition and physicochemical properties of fractionated products at all stages were analyzed. The results showed that the solid fat yield at 28 ℃ was the highest, reaching 50.63%. As the crystallization temperature decreased, the unsaturated fatty acid content in each fraction increased: the unsaturated fatty acid content in liquid oil increased from 46.78% (crude sheep fat) to 5675% (8 ℃ liquid oil), and the unsaturated fatty acid content in solid fat increased to 52.85% (8 ℃ solid fat). The 8 ℃ liquid oil had the lowest melting point (9.1 ℃) and the highest acid value, peroxide value and malondialdehyde content, which were 1.31 mgKOH/g, 0.19 g/100 g, and 2.91 nmol/mL, respectively. The acid value, peroxide value, and malondialdehyde content of all fractions met the requirements of national standards. The iodine values of 8 ℃ solid fat and 8 ℃ liquid oil were relatively high, which were 63.88 g/100 g and 64.86 g/100 g, respectively. In conclusion, multi-stage dry fractionation of sheep rump fat can effectively separate fractions rich in saturated fatty acids and fractions rich in unsaturated fatty acids. The physicochemical properties of products at all stages differ, enabling targeted utilization based on application requirements. |
