| Abstract: |
| To provide a reference for increasing the tocopherol content in soybean oil deodorizer distillate, two detection methods of tocopherol in soybean oil deodorizer distillate were compared. The changes in tocopherol content in soybean oil deodorizer distillate were investigated under actual deodorization processes (deodorization at 240-246 ℃ for 60 min with stripping steam amount of 0.02-0.10 kg/t) and storage conditions (storage in carbon steel tanks at room temperature for 20-40 d), as well as under three simulated storage conditions (storage at room temperature, nitrogen-filled atmosphere, and 35 ℃ for 30 d). Meanwhile, the contents of hazardous components (3-chloropropanol esters, glycidyl esters, and trans fatty acids) in the finished first-grade soybean oil obtained under the process conditions for high-tocopherol soybean oil deodorizer distillate were analyzed. The results showed that compared with the HPLC-FLD method, the HPLC-UV method could yield more accurate determination results. In actual production and storage, the total tocopherol content in soybean oil deodorizer distillate ranged from 5.29% to 798%. Among them, the contents of α-, γ-, and δ-tocopherols were 0.48%-0.88%, 3.04%-4.69%, and 1.43%-263%, respectively. The 30 d simulated storage experiment revealed that the total tocopherol content in soybean oil deodorizer distillate remained almost unchanged under nitrogen-filled conditions, while the loss rates at room temperature and 35 ℃ were 8.4% and 18.6%, respectively. Among them, α-tocopherol exhibited the highest loss rate, followed by γ-tocopherol and δ-tocopherol. Among the 11 batches of first-grade soybean oil corresponding to the process conditions for high-tocopherol soybean oil deodorizer distillate, 2 batches had 3-chloropropanol esters contents exceeding 1.25 mg/kg, all batches had glycidyl esters contents exceeding 1 mg/kg, and 9 batches had trans fatty acids contents exceeding 2.5%. In conclusion, it is recommended to adopt measures such as nitrogen filling and low temperature according to the actual storage duration to reduce the loss of tocopherol in soybean oil deodorizer distillate during production and storage, meanwhile, when developing process for high-tocopherol soybean oil deodorizer distillate, attention should be paid to the oil quality. |
