Abstract:
      The volatile compounds in sacha inchi oil were analyzed by headspace solid-phase microextraction (HS-SPME) and gas chromatography-mass spectrometry (GC-MS). The results showed that a total of 46 volatile compounds were identified in the sacha inchi oil, accounting for 8673% of the total volatile compounds. The main constituents were (2E,4E)-2,4-heptadienal, (2E, 4Z)-2,4-heptadienal, 1-(1-cyclohexen-1-yl)- ethanone, (E,E)-3,5-octadien-2-one, 3,5-octadien-2-one, (E)-2-pentene, hexanal, (E)-2-heptenal. The main compounds were aldehydes, ketones and hydrocarbons, with a small amount of alcohols and furans.
